Many files are using the outdated "driver/i2c.h" file. These need to be updated to the new i2c_master.h driver

As the old interface will get removed eventually, we need an option to incrementally update all components.

What do you think about introducing a KConfig option to select old or new implementation for the IO Expander, which would allow other components to upgrade step by step?

The old vs. ng is also relevant for the esp32_display_panel as well as with the esp_codec_dev - we're trying to use the Waveshare ESP32-S3-Touch-LCD-1.85C-BOX with current drivers.
